I ended up doing this.. worked fine. (as I can tell so far)

Since I have my drives mounted by label, I just unmounted, changed the label, removed.
Installed new drive, formatted with label and it mounted right up.

Then I copied the old drive to the new drive using a USB->SATA adapter.

(yea, it was slow. 765GB took about 7-8hrs)

Presto - all done.
