Ok.  I wrongly assumed that if I added a Video SG (or Recording SG) to a 
slave, it would be "look here as well" rather than "look here instead"

Ive solved my problem, by adding a Menu Entry "Scan for New Videos" that 
runs 'mythutil --scanvideos' on the MBE.  So now I can have the 
directories mounted on the Slaves and Frontends, and scan for new files 
without screwing all the metadata.
