The mythbackend.service file comes from the git rpm built with the
scripts etc from the packaging repo.
In there is:

[Service]
Type=simple


I.e.: start the daemon (without -d), it won't fork.
So the commandline for mythbackend and the systemd file are set up in
the same manner.
There is no PIDFile line in the service file.

So who thought of this?
