Yes, Gig-E is fine.  100Mbit may or may not be depending on your
system config.  I have sometimes have 4 HD tuners, each of which could
theoretically be writing 19 Megabit.  That's 76 Megabit raw, not counting
any NFS or other protocol overhead.  Since the HDHR is hooked up to
cable and recording via QAM, 2 of my tuners are quite a bit below
19 Megabit, but it's still more than I'd want to push through a 100
Megabit ethernet connection because it doesn't allow much room for
playback or overhead.

My MythTV systems are all connected to a Gig-E switch.  The fileserver,
VMWare server, and main frontend have Gig-E nics.  Even with my low-end
Athlon 700 fileserver, I've been able to push about 30 MegaBytes
per second to/from my NFS filesystems and that's using regular
packets, I've not switched to jumbo packets because I have some
100 Megabit devices on the network both on that switch and on another
100 Megabit switch.
