Yes.

Not automatically in LiveTV.  You'd have to do it using the NEXTCARD 
binding (not bound to any key by default, so you'd have to map it) or 
using the OSD menu.

Nope.  Only the HDD sees a difference (i.e. assuming the same 
subchannel, you're writing multiple copies of the same program to disk).

Well, Myth does, but yeah.

Chances are, because of the extra work involved in switching muxes, 
you'd be /much/ happier just having a couple extra capture cards (or 
teaching people to not use LiveTV).
