So I've been reading more about this, and I'm trying to figure out how
to use it with a myth system.

I imagine that the first step is to use it with my DVD player connected
directly to the TV (via composite), to get the TV calibrated correctly.

Step 2 would be to rip the DVD, and play it in mythvideo to calibrate
the myth playback (xv) controls.

Step 3 is where I'm confused. How can I calibrate the pvr500's ripping?
Should I play the DVD in the dvd player, connected to the pvr500 via
svideo? Is the DVD connected via svideo a reasonable proxy for the ntsc
tuner on the same card?
