I a fairly sure that the adapter in the MX 400 box was the problem. I
went out and bought a decent S-Video to Composite cable and ST:NG was in
living futuristic color this evening. It seems that if in the process of
S-video to composite conversion, you can lose the color signal...with
crappy hardware (such as a free adapter).

Yes, the VGA monitor is now starting to collect dust in the spare
bedroom. :-D
Even on my analog tube TV set, just about everything looks fine. And
what doesn't gets taken care of thru ssh or Xvnc.

The black and white output you are experience is due to the fact that
you may be loading the "S-Video" drivers rather the "Composite" driver
for the card. Even though you only have and Svideo out on the card with
the Svideo to Composite out, you need to select the appropriate video

And you should see the instructions in that section on how to determine
/ test which video out you are using /need to use.
