My current problem is that my brand new Shuttle doesn't have an option
to turn of ACPI.  It's listed in the BIOS and the only option is
"Enabled".

Yes, if the magic smoke escapes, the computer no longer works.  As long
as the smoke is kept contained, the magic flows...
