Yep - just install the src rpm, then usually you'd do something like:

cd /usr/src/redhat/SPECS
edit the <packagename>.spec file with the settings you'd like
rpmbuild -bb <packagename>.spec
cd ../RPMS/<arch>

Then you can install the new rpms.
