That makes sense, such small monitors would not show the problems with 
composite. 

Hand-assembling an RCA or a DVI connector is not hard at all, nor is a VGA 
connector. Both are easier than clamp and solder BNC connectors, which are not 
all that difficult either, but I speak from years of practice at assembling all 
of those.

For a car, you might even consider some of the RF solutions that run at 2.4 
Ghz. You could modify one of the RF-connected backup camera setups that are 
available for well under $100, just use the mod/demod portion.
