The CD-ROM connector is an input connector for connecting your CD-ROM's
analog output to the soundcard/motherboard.
The CD-ROM and AUX connectors are most definitely inputs as you correctly
stated from the website.
Also, as I stated, the audio is fine when I do not mute the AUX or CDROM
inputs. It's only when the audio is 'captured'
by MythTV and then played back along with the video do I get the distorted
audio.

Surely the CD-ROM connector is an output ? So if you're getting the
same issue then maybe the AUX connector you're using is also an output
and you're just hearing some crosstalk. Is there a line-in connector
to try?
The asrock website lists
CD/AUX/ audio in - on the board
and
Audio I/O Line In/Line Out/Mic. - on the rear panel
The rear panel Line-In is what I'd try.
