I am also creating a new ext3 fs on software raid5 (mdadm) for my recordings
as I had some trouble with jfs (
http://www.gossamer-threads.com/lists/mythtv/users/346373).

I have noticed some interesting options
-m 0 as mentioned by Kingsley
-T largefile or -T largefile4, I don't know which is the best in this case
-J size=n : I don't know if it is necessary and how to "play" with it

In my case (software raid5), I should also be aware of the --stride=n option
(http://tldp.org/HOWTO/Software-RAID-HOWTO-5.html#ss5.11).

When using ext3 for recordings, you should set the mythtv slow delete option
(http://www.mythtv.org/docs/mythtv-HOWTO-3.html, see Filesystems).

Regards.
