You alter the recording profiles for your capture card, and choose the
most appropriate one to use for your recordings. The LiveTV profile
will be used for watching LiveTV, and there are 3 more (Default, Low
Quality and High Quality) which you can select for each of your
recording rules. You can alter the bitrate settings via mythfrontend:

Setup -> TV Settings -> Recording Profiles

It depends to some extent on what type/quality of capture card you are
using, and also how clean (free from noise) your TV signal is for each
of your analog channels.
