The OSD is rendered at the same resolution as whatever video is being
played back. Just for fun, try transcoding something to low quality
and then see how horrible the OSD looks. I think I remember reading
that it was going to be fixed in the near future, but my memory is
fuzzy on the issue, so perhaps I'm making it up.

Still, even with SD material, the OSD should at least look decent.
Have you checked your settings to see what resolution you have the
PVR-500 set to record at?
