The server will install will give you a basic installation.  You can later on 
install the packages you want.
The desktop is actually a server install + extra packages.  Installing 
ubuntu-desktop after a server install will give you the same setup as doing a 
desktop install.

For a frontend, you want a minimal setup.  So I recommend doing a server 
install and after that, just install the mythfrontend.  It will check all 
dependencies and install all the needed stuff.
If you are unsure, you can do a desktop install as test.  Once you are 
familiar with ubuntu, you can try a server install.
