As was suggested here yesterday try running a monitoring utility on  
the interface while you change menus and see what all the  
chattering's about.

I've basically concluded that, except for a laptop that MUST move  
around, wireless is something to be avoided if at all possible, but  
I'm sure you have reasons why a wire is impractical.

Also, if you are running NFS over a wireless link are you using TCP  
or the default UDP? Perhaps you are not really "saturated" but just  
busy enough to be getting dropped packets which UDP doesn't cope with  
too well.
