Heh...I know how that goes, I started off with two tuners and then
realized that sometimes a man needs to watch live TV while two shows are
recording. Was quite pleased with how smoothly the addition went, once
I got over a few "you learn something new every day" moments.

Just about, as far as I know. There is a priority setting that you can
assign to each tuner card within mythtv-setup. I can't recall WHERE,
but when you find it, you can drop the PVR-350 down to a lower priority
setting. This won't EXCLUDE it from recording, but it'll make it the
last card selected, which will give you the same net effect except for
those times when you want to record three shows simultaneously (also
known as Sunday Nights At Our House, now that "24" is back.)
