I highly recommend a Hauppauge! WinTV PVR-250 or PVR-250MCE and a

One capture card per channel.  If you want Picture-in-Picture, that 
requires two channels, so two captures cards.  If you want to record two 
different things off different channels at the same time, you'll need 
two capture cards.
