I use iTunes to manage music and MythMusic to listen in my home theater 
room.  MythMusic seems to have a few problems with special characters 
in file names or ID3 tags, but other than that it works well.

Since I've got a laptop, I just use rsync, but file sharing options are 
plentiful as you assume.  The easiest setup IMO would be to turn on 
"Windows Sharing" (SMB) on the Mac.  Then you can use the Samba client 
on the Linux end to connect to your Mac's home directory; "<samba mount 
point>/Music/iTunes/iTunes Music" is the directory you'd point 
MythMusic at.

I don't use MythGallery, but I'd assume a very similar setup would 
work.  Apple's iPhoto stores pictures in your home directory just as 
iTunes does, although the directory layout may not be very friendly for 
navigating in MythGallery.
