Yeah, it's on my TODO list to try to rework that screen to get a help
description for each item somehow.

Myth can automatically delete recordings if it needs space to record new
programs.  It will only delete (auto-expire) recordings that have this
checkbox turned on.  If you don't have any recordings which can be
auto-expired then Myth won't be able to delete anything if your hard drive
fills up.

None.

> * If I don't turn on "auto-expire" will the last option do anything?

No, no relationship.

> * If I tell it to keep a maximum of 2 episodes, but don't turn on
>   the bottom option, what happens?

Then it won't record a 3rd episode.  If you do check the 3rd/bottom
option, then Myth will record a 3rd episode but will delete the oldest
so there will only be 2 left.  It will always keep the newest episodes
with the "record new and delete oldest" setting turned ON.
