Unfortunately, I believe you will always have that hiss when using the CMI8738 
in full-duplex mode.  IIRC, it chops the sample size in half to do duplex; 
i.e., normally it is 16-bit sound, but to do duplex it can only do 8-bit 
sound on both in and out.  I ditched my onboard CMI8738 sound and got a 
decent sound card, which ended up being a wasted of money as shortly 
thereafter I found I could get btaudio working on my WinTV-radio.  If btaudio 
is not an option, then I recommend either getting a good sound card that does 
full duplex, or at least a second sound card so you can use one for recording 
and one for playback (in which case you don't care if it does full duplex or 
not).
