What I'm wondering is if I grab just mythtranscode and try to compile it on say a Solaris box, how much of mythtv I'll have to bring with it.

Well, considering that mythtranscode is part of mythtv, and you need
mythtranscode and its fifo trick to use my nuvexport script (only thing
I know of at the moment that easily deals with transcoding to mpeg),
you'd need mythtv. Then again, if your nuv files are from a pvr-250
type card, you'd be fine with the standard assortment of mpeg encoding
tools.
