You could disable each of your inputs:

mythtv-setup -> 5. Input connections -> <pick an input> -> Interactions
between inputs: -> Schedule order: 0

The lower the "Schedule order" the higher the priority when picking that
input to record -- until it hits zero.  If the schedule order is 0, then
that input is disabled for recording.  Do that to all of your inputs, and
mythtv wont have any inputs to use for recording...
