This is the process, for example to set a button for Menu
Setup->Edit Keys->Global->Menu
Press right arrow until you are on a blank box at the bottom
Press Enter
See a dialog that says "Press a key Waiting for a key press"
Press the button on the remote that you want to use for menu (or hold it 
down for a long press)
See a dialog that says "Add key 'Enter'"?
Select OK.

Repeat for other keys.
Escape to exit and remember to select OK to "Save changes"

Note that to use long press you have to first add that to the Long press 
group and exit out of Edit keys before you can add the Long Press key to 
the Menu action.

I set the rewind and FF buttons at the bottom as volume controls, but 
you can set them as you please, for example you can set a menu option there.

You can try OpenGL Slim. It seems to work about as well as mediacodec 
normal and may help with your problem with the HDPVR.

I have a fire stick gen 2 and it has the same version numbers so I 
assume yours in gen 2.
Under certain conditions the colors go wrong. I have a fix for that.
If you are still having problems with HDPVR recordings you can open 
ticket, provide a sample file of a recording that causes a crash, and I 
can look into it.
