I'm still using mythlink.pl on my recordings like this:
mythlink.pl --link /mnt/plex-tv --format %U/%T/%T\ -\ %oY-%om-%od\ -\ %S
This outputs a subdirectory for recording group, then show title, with
filenames for show, original air date and title like this:
/mnt/plex-tv/Default/The Walking Dead/The Walking Dead - 2018-04-15 -
Wrath.ts -> /mnt/video/recording/5043_20180416010000.ts
In Plex, I have a "TV Shows" library pointing to /mnt/plex-tv, but you
could also point it a level deeper to /mnt/plex-tv/Default
