Another step forward, but I give up for now :-) 2 days of wires all over 
the place is enough for the family.

When I plugger the amplifier in, suddenly it COULD find channels in the 
HD transport (no idea why Windows could do that without any signal 
amplification). But, clicking "Watch TV" still just flashed straight 
back to the main menu on the frontend.

Here's the output of "sudo service mythtv-backend status" after the issue.

I'm now just going to set up my 2 old SD tuners again and put the HD 
tuner in a draw.

Thanks for the help everyone!

I'm actually delighted that I'll have TV working again! Glad to have 
found the problem with the amplifier/splitter. As I said before, HD 
matters to me for films, but not TV.
