If I understand it right, you're going to use new disks, so I think it
simple. Create the new basic system on the new disk(s), while
temporarily uncoupling the old disks. Then when it boots create a dual
boot. This way you can leave the old system operational while in
between you can tweak the new system with either a temporarily empty
database or a backup from the running database. Once you're happy with
it, restore a recent backup to the new system and do some further last
minute things you can not do before. Then in case you missed
something, keep the old disks around for a month or so.

This is even possible if you only use a new system disk. You can
couple the data once you activate the new setup. Be sure to chown any
mythtv data to the UID from the new install. They won't be the same.
But only after you move the new install to production!
