I normally just stop the existing backend whilst installing on a new 
backend machine.
You then use mythtv-setup on the new machine to set both IP addresses on 
the General screen to that of the new machine.

If using Mythbuntu you could just install  without a network connection 
and then use mythtv-setup to set the IP addresses in the General screen.
