I don't recall seeing a rule anywhere that one has to play only content
that matches one's output resolution.

Just because an output device is 1080p doesn't demand that all content
be 1080p.  Quite arguably there is a lot of content that doesn't warrant
the additional storage and bandwidth of 1080p because the visual
improvement is only minimal.  Just like there is some content that does
demand it.  But not everyone views that kind of content.

To abuse your analogy, not everyone is hunting bears and needs big
powerful weapons.  Some of us are happy hunting slow moving targets that
stone knives work well on and big weaponry is just wasted on.
