Using the mythtv-setup for changing the source EIT, using Mythweb for useonairguide as you expected.
So, not poking in the DB as such.. (for that at least)
I may not have restarted after using Mythweb, but surely after changing the source setup. (Mythtv-setup shuts down the backend)

I will retry, but now also restart the BE after using Mythweb to change the useonairguide.

But I assume that it is supposed to work as I expected then.

You need to shut down (all) mythbackend (instances on all hosts) and run mythtv-setup and change the "Use on air guide" setting, then restart your mythbackend. If you're poking values directly into the database using, for example, the mysql tools or MythWeb's channel editor (which I'm guessing you're doing based on your calling it "useonairguide"), changing it won't have any effect. At minimum, you must restart every single mythbackend instance.

Using the mythtv-setup for changing the source EIT, using Mythweb for useonairguide as you expected.

I may not have restarted after using Mythweb, but surely after changing the source setup. (Mythtv-setup shuts down the -my only- backend)

I will retry, but now also restart the BE after using Mythweb to change the useonairguide setting.

But I assume that it is supposed to work as I expected then.
