I've been trying to get this to work but not having any luck because as far
as I can make out, Plex just ignores links (whether they're hard or
symbolic links) - they refuse to show up in the Plex libraries. This is
very frustrating and I've seen other people posting with similar issues
when trying to use links.

But some people here are clearly having some success somehow when using
mythlinks.pl. Anyone care to share their secret for getting Plex to show
links in the Plex libraries?
