Some of that occurred because I pasted in or out of Gmail, and I could NOT figure out how to convert my G-mail text into SIMPLE unformatted text.  ARRRRGGG!!! 
The signature line was my bad.  I meant to delete it, and forgot it was there. 

As for some of the rest, I wish there was a way in Macintosh Mail AND in G-mail to select just a monospace mode.  i.e.: Not necessarily a monospace FONT, just a mode where all fonts would be monospace.
