Hi Craig
It should be sufficient to recreate the partition exactly as it was.
You can even try mounting it first -
mount -o offset=x,ro /dev/sdx /mnt
x = starting sector times sectorsize

Failing that, download the Ultimate Boot CD - that has partition recovery tools on it. In fact I would be inclined to use the UBCD first before trying anything like re-creating the partition with gparted.
