The iPhone is using the  ipv6 link-local address when available, which
usually is also used by iTunes. So it's surprising it doesn't try using
that.

What's the output of ifconfig on that box?

Looks like IPv4 isn't configured.
In frontend-only mode, AirPlay will listen on all interfaces available,
plus the IPv6 link-local address

When pasting logs, don't cut... It only makes things harder to identify,
because what you think is not relevant may actually be. Here you're missing
the important part in regards to the bonjour advertising.
