Actually, using Thunderbird, I can do both. This relies on using different email 
addresses for different people/mailing lists/companies, but that's a good thing 
anyway as you can comparmentalize any spam or intruder problems that way.

You simply set things up the way each recipient requires in the 'Account' settings.
