You can hit M to get the recording information menu, which (IIRC) has a 
menu "Recording Options" and when you go to that menu, one option will 
be "Stop Recording".  So, rather than Delete the existing part, you 
should have just stopped the recording, then restarted it.  To restart 
recording if the rule specifies duplicate matching, you'd either have to 
do a one-time override recording rule or in Watch Recordings, highlight 
the recording, MENU|Recording Options|Allow this episode to re-record 
(or whatever the words happen to be).
