[mythtv-users] Output to h.264

Rather than output on a video card, other than locally for setting up etc, I would rather output all SD and any HD video to h.264 to network.
Can anyone provide some insight, links, tips etc. I have been searching for days, come across a ton of information but much of it is old or things that people were trying etc.

I currently have knoppmyth installed as this was the only distro which would install for what ever reason.
