I would expect that the Artist field is used for the Artist for the
specific track, whereas the Album Artist field is used for the Artist
for the album as a whole.  The obvious examples I can think of are
Various artist albums (in which case the Album Artist is "Various"), and
duets/collaborations (where the Album Artist is often a single artist,
whereas the track Artist contains the multiple artists).  Most
applications will just use the Artist field though (from what I've seen
anyway).

Not that I know of.  I guess you could create .m3u files, leaving out
the tracks you don't like - it'll probably be app-specific whether they
default to the .m3u file or play the entire folder though.
