I googled for "Unknown encoder 'mpeg2video'" and found out that the version of ffmpeg shipped with most (all) distributions is "gimped" and won't do transcoding.  I followed the instructions (http://ubuntuforums.org/showthread.php?t=986534) I found using apt-get to remove the ffmpeg that came with Mythbuntu and install an ungimped version.  Mytharchive, ffmpeg, and dvdauthor then all worked to author a DVD.

AWESOME!!!!!!  I followed that link and was able to make the recording 
using the SP encoder.  No sound or video issues.  Thanks a million for 
the tip!  The only thing I'd like to mention is that when I did the 
apt-get purge ffmpeg, it took mytharchive with it, so I had to apt-get 
install mytharchive to get it back.  No big deal, but thought I'd 
mention it.
