Have you tried adding something like 'allocsize=512m' to your mount 
options?  This tells XFS to preallocate 512 megabytes of space when 
writing to a file, instead of the default of 64 kilobytes.  I found it 
greatly reduced fragmentation on my Myth system, but I'm not using NFS 
heavily.
