As a minimum:

/etc
/home/mythtv    (or whatever your mythtv is)
/root

and a backup of the mythconverg database (even if you don't want to
take your recordings with you, you might find the card setup,
channels, recording rules
etc usefull).

Actually moving the recordings is pretty easy.  Just copy them to one
of your new disks, then mount them in the same location as they were
on the old system before you restore the database.
