Indeed, GMail does the same. "-- " is the universally accepted
"Signature Block header" mark, IIRC.

In fact, GMail colours signatures grey, to signify they're not part of
the message content itself, but still displaying them (In case it got
it wrong, or there's information the user wants to read in the sig
block).
