And yes, you're better using multiple disks than LVM.  Whether or not
to use RAID depends on your requirements - RAID0 will give you better
performance (though over a network this may not be noticeable) but lower
reliability, whereas RAID5 will give you better reliability at the cost
of disk space and performance (again, the network performance may negate
this issue).
