Everything you've got looks quite possible, and none too uncommon.

Yes, mythweb is just a regular website, running in Apache. So as long as
you set up your firewall correctly, mythweb can be made available from
the internet (you can set up a password in mythweb for security, or you
can use Apache's built-in security).

Absolutely. Everything is always controlled from a frontend.

If you're going to be viewing HD, I might be a good idea to ensure
you've got a video card capable of XvMC. Otherwise, 900MHz should be
plenty for SD.

Yes, though I personally have found it can be a bit of a pain setting up
LIRC. You just need to be patient (which I'm not :p)

Absolutely. You'll set up an NFS share of your media directory and rip
to that.

I'd say so. Of course, it mostly depends on your hardware, but I've
found the software to be extremely reliable.
