IMHO, you can turn off the following:

anacron (if your backend is continuously on)
apmd
atd
avahi-daemon (if you're not sharing resources with a Mac)
gpm (if you're not using the mouse when backend is in text mode)
iptables (if your backend doesn't have a inbound connection from the Internet)
irqbalance (if you have a single-core CPU)
kudzu (if you don't change hardware. If you do, you can run kudzu
manually after a "single" boot)
lm_sensors (if you're not actually using the motherboard sensors)
mcstrans
mdmonitor (if you're not running software RAID)
nfs (if you're not sharing files via NFS)
nfslock (same)
rpcgssd (same)
rpcidmapd (same)
portmap (if you're not sharing OR receiving files via NFS)
restorecond (if selinux is disabled)
smb (if your backend isn't sharing files or printers, or providing
Windows domain services (like user names and passwords)
