I'm not sure why you are saying the sata/ide converter wouldn't work? If you
have an open IDE channel it would work as it converts the sata connection to
an ide connection you can use without a sata card.
If you do go sata, I have had absolutely no problems with the silicon image
based cards. I know the promise card also works in linux as I've spent a
great deal of time on the linux-ide/sata mailing lists and whatnot. I'd try
to stay away from VIA anything as I've had a few bad experiences with them
and their hardware support in linux isn't the best.
