I had a similar problem with a sat set top box with the sound being left
muted - I'd record perfect video with no audio.

I found that hitting vol+ would unmute whereas sending a 'mute' keypress
would just toggle the state (and be as likely to mute as unmute the
sound). My channel change script that drives the IR blaster to the STB now
outputs a vol+ code before the channel number data to ensure that the STB
is in the right state for a recording.

Perhaps  a similar approach would be your best solution - make the channel
change script always put the STB into a known good state on any channel
change (which will always occur as a recording starts) and then just use
the manual methods for the VOD viewing. Getting from an unknown state to a
known one may involve a non-obvious sequence of keypresses though!!
