I do like this idea. This allows for an easy upgrade path. For upgrading I can add an extra drive and either mount it there or make a symlink to the new mount point. Actally I seems that for upgrading I could copy the existing data to a new partition and things should just work. But that gets on the geeky/techical side of things. Also I can have the main FS partition be ext3 and the /video partition be XFS and that would eliminate the problems. Now I need to go do some research and see if XFS has been added to the kernel as the last time I played with it I had to custom patch my kernel to support XFS.
