Depending on how CD-R/RW friendly your XBox's DVD-ROM drive is ;)

Even easier than that.

1.) Install UXE
2.) Download pre-fab'd MythTV/Xebian image
3.) Upload the Xebian disk image to the hard drive (with boot software)
4.) Configure MythTV

Or at least, that's how I did it. Both options are very viable.
