So I shouldn't use the red, white and yellow cables and just use the
S-video adapter? Or should I use the S-video adapter in addition to the
red, white and yellow cables?

Yeah, I did all of that. I know about the ramdisk, because I had to
rebuild a default one when I found out the one they tell you to make
doesn't work.
